GINGER BEE'S KNEES~ a classic from the Prohibition era, the Bee’s Knees (old school slang for the Best of the Best) was invented in Paris as a riff on the standard Gin Sour’s gin + lemon, with honey instead of sugar. The tradition of adaptation continues here with delicious infused notes of ginger and elderflower. Beeeelightful.

MAKING THIS COCKTAIL AT HOME...
Quickly infuse your gin with this 1pt infusion blend (just like making tea, except with gin instead of water). Follow the simple recipe (included) to combine your Ginger-infused gin, fresh lemon juice, and honey/syrup in a shaker. Serve up or over ice in any glass you like. Candied ginger or lemon twist garnish.

The trick to simple delicious cocktails is rapid infusion. 1pt makes it very, very easy. Just follow these simple instructions and you're on your way to the perfect cocktail!What You Need
- a 1pt Blend Packet
- 375ml of spirits (half a standard bottle)
- A jar, pitcher, bowl, measuring cup, or any lidded vessel that holds at least 375ml of liquid (our 1pt Infusion Kit is purpose built for this)
- Open the 1pt Blend Packet and empty ALL of the contents into your vessel
- Add your 375ml of spirits to that same vessel and set a timer for the Infusion Time it tells you on the back of the 1pt Blend Packet
- When time's up, use a strainer to strain the now-infused spirit liquid into a suitable bottle (again, our 1pt Bar Bottle+ is the perfect thing but you can use any bottle you like), discard the used infusion blend material, and reserve the infused spirit for your cocktails
- Combine one 1pt Blend Packet with one standard bottle of wine (750ml) in a saucepan
- Simmer (do not boil) over low heat for 20-30 mins, following recipe
- Strain liquid and return to saucepan on lowest heat for serving, keep covered

Crisp, cooling mint, balanced with subtle hints of lemon and ginger, grounded with a pinch of earthy Long Jing green tea from Anhui province in China. This blend works well with a broad range of spirits and provides an active base for an array of classic cocktails such as the Mint Julep and the Mojito. Infusion Time: 5-6 hrs

An uplifting, aromatic blend of lavender, orange zest, and licorice root with a balancing note of soothing chamomile. Ideally suited to fruit- or wine-based cocktails, the aromatic quality of this blend also complements the complex notes of most gins, and the sweetness of bourbon. Reminiscent of freshly-cut wildflowers and summer garden parties. Infusion Time: 4-5 hr

Sencha Fukamushi / Orange Zest / Pink Peppercorn / Flaked Chili
A robust, savory blend with heady notes of freshly-ground pink peppercorn and the lingering heat of mouth-tingling chili flakes. Steamed Japanese Sencha Shizuoka green tea lends a gentle saltiness that elevates the warmth of the blend and enhances overall flavor clarity. Perfect for firing up most spirits and cocktails. Orange Zest / Apple / Cinnamon / Rooibos / Ginger
We actively manage the bold peppery tones of cinnamon with layered notes of mellowing soft fruits and a gentle hint of ginger. The cinnamon develops quite quickly during infusion making it imperative to infuse for the full recommended five hours by which time with the apple and orange emerge to deliver a critical balancing, golden warmth. A deceptively versatile blend that references both the golden age of Island/Tiki cocktails on one the hand, and on the other, autumn days spent by a roaring fire. Infusion Time: 5-6 hrs

Sangria Blanco is anything but new. Credited with inspiring the famous sparkling wine of the Cava region of Spain, the focus for White Sangria has always been floral, herbaceous, and botanical flavor notes. This 1pt blend echoes those characteristics to deliver a lighter, breezier alternative to classic Red. Best infused in a fruit-forward white wine. Infusion Time: 3 hrs

Reminiscent of an early summer evening stroll through an English Garden, this highly aromatic blend blossoms in the presence of clear spirits and develops a subtle range of floral and botanical flavor characteristics that would be hard to achieve any other way.
